- 2 cups Basmati Rice

- 2 medium onion

- 5-6 garlic cloves
- 2-3 green chilli
- 2 bay leaf
- 3 Cardamom
- 4 Cloves

- 1 tbsp Oil
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Biriyani Masala
- 1 tsp Cumin seeds
- As Per Required Salt
- 1/2 tsp Red chilli powder
- 1 tsp Sugar
Steps to make to make Mix Vegetable Pulao
- Finely chop veggies and parboil green peas.

- Soak rice for 30 minutes and keep aside.


- In a moderately heated pan, add oil + ghee, add cumin seeds + bay leaf + cardamom + cloves + cinnamon and allow to crackle and spices turn aromatic. Add onion and sauté till pinkish. Add ginger + garlic and sauté for a few seconds.



- Add veggies except for green peas and stir fry by adding slight salt, sauté for 4-5 minutes.



- Now add all spices and sauté for 1 minute, then add green peas and sauté for 3-4 minutes.



- Now add soaked rice and gently mix, fry the rice for 2 minutes.



- Now add 4 cups warm water, mix very nicely and cook under medium flame by covering for 7-8 minutes.



- Now check rice and water, rice is semi-soft, so add 1/2 - 1 cup warm water + sugar and cook rice by covering under low flame for 10 - 12 minutes or till rice softens. Chopped coriander can be added at this stage and check for salt also.



- Switch off the flame and keep in stand-by mode for 2-3 minutes, Pulao is ready.



- Serve with Raita or Tomato Chutney and enjoy.
